2 slice freshly toasted bread
butter both sides
– wash well, & scrape 4 or 5 anchovies,
chop fine, & put between the toast.
cut thro’ with sharp knife:
Take yolks of 2 eggs well beaten,
¼ Pint milk or cream
set over fire to thicken, not boil.
Keep stirred –
& pour this custard over the toast
& serve as hot as possible –
Prawns fresh, boiled, or pounded with butter
may be used instead of anchovies —
