Duke of Conaught Pudding

from Carry’s Cook Augusta Gardens, Folkest…

3 eggs
their weight in flour
add Butter
Sugar

Beat the butter to a cream then gradually work in the flour
Beat white the Eggs and sugar together then mix it all together
Beat it for 20 minutes, Bake in a moderate oven for ½ an hour

Sauce for the Pudding
1 teaspoonful of arrowroot mixed with
½ pint boiling water and after adding 1 Tablespoonful of jam (strawberry or raspberry) let it simmer for half an hour
strain and pour over the pudding
add a little colouring if necessary —
